Chopped salad with smoked chicken
Serves 4
200g smoked chicken breast, flaked into pieces
2 avocado, peeled and cut into wedges
2 sticks of celery
1 cucumber, peeled and diced
2 beef tomatoes, deseeded and diced
8 breakfast radishes, thinly sliced
½ bunch mint, picked and chopped
3 heads of cos lettuce, picked, washed and hand torn
8 pieces of coppa, dried in a low oven
Sour dough bread, broken into pieces
Salt & pepper
To make the mustard vinaigrette
50g Dijon mustard
1 ½ tbsp Chardonnay vinegar
1tsp honey
70ml fresh orange juice
120ml olive oil

To make the mustard vinaigrette whisk together the mustard, vinegar, honey, orange juice and olive oil, then season with salt and freshly ground black pepper. In a large stainless steel bowl place the smoked chicken, chopped celery, cucumber, tomatoes and sliced radishes. Add the mustard vinaigrette and lightly mix. Add the lettuce and mint and lightly mix again. To make the croutons, take the sour dough bread pieces and toss in a bowl with garlic oil and seasoning. Spread out on a baking tray and put in a preheated oven at 160ºC until lightly browned and dry. Arrange in a large bowl, ensuring that the ingredients are evenly distributed and finish with crispy coppa and sour dough croutons.
