500g sugar
25g glucose
5g / 1 tspn bicarbonate of soda
100ml cold water
1 small packet of hundreds and thousands
100g melted white chocolate
50g popping candy (available online or at certain retailers)
Place the sugar and the glucose in a pan over a mid-high heat and dissolve with the cold water. Keep on the stove until the sugar mixture starts to turn a golden brown colour, this will take approximately 15 minutes. When this happens, vigorously whisk in the bicarbonate of soda with a handheld whisk, until the mixture starts froth up. When this happens, pour the mixture onto an oven tray lined with greaseproof paper.
Meanwhile, melt the white chocolate (either in the microwave or over a bain marie). Once melted lightly sprinkle the melted chocolate over the mixture. Finally, add the hundreds and thousands (to taste) and popping candy to taste and leave to cool for a minimum of thirty minutes.
