Pomelo salad with pomegranate, fragrant herbs and peanuts

 

Dressing

300ml lime juice
40g caster sugar
20g salt
20g red chilli, finely chopped
20g garlic, finely chopped

To make the dressing pound the chilli, garlic and a pinch of salt with a mortar and pestle to make a paste then add the sugar, lime juice and remaining salt. Mix well and check seasoning. It should be hot, sour and a little sweet.

Salad

100g pomelo
30g pomegranate
3g mint leaves
3g coriander leaves
3g red chilli rings
20g carrots - julienne
20g shallots - finely sliced
2g crispy garlic
2g crispy shallots
10g peanut - crushed

To make the salad peel the pomelo and remove any white pith from the flesh. Break the flesh into bite size pieces. Next peel the pomegranate and remove the seeds. Mix the pomelo and pomegranate with the herbs, carrot, chilli and shallots and add the dressing. Mix well and carefully pile up on a plate and top with the crispy shallots, garlic and peanuts.
