Shrimp & scallop burger with spiced mayonnaise

Serves 5

For the burger

500gm tiger prawn tails, half chopped, half blended
150gm scallop meat, chopped
50gm salmon meat, chopped
4 spring onions, thinly sliced
50gm chilli, chopped
Green Tabasco
Lemon juice
Parsley
Seasoning

For the spiced mayonnaise:

200gm chillies halved and seeded
50ml olive oil
150ml good mayonnaise
Parsley, chopped
Lemon juice

Begin by making the spiced mayonnaise.  Slowly cook the chillies in the olive oil and leave to cook in the olive oil, drain and blend together.  Mix the chilli puree with the mayonnaise and finish with parsley, lemon juice and seasoning to taste.

To make the burgers, place all the ingredients in a bowl and mix together.  Season with salt and pepper and add the lemon juice and green Tabasco to taste.  Split the mixture into five and shape into patties, they should weigh around 150gm each.  Save a teaspoonful of the mixture to test in the frying pan.  Pan fry the patties and serve on a toasted by with the spiced mayonnaise and a gherkin or garnish of your choice.
