Spotted Dick

Serves 6

360g plain flour
2 tso baking powder
Pinch of salt
180g suet
125g soft brown sugar
175g currants, soaked in hot water overnight
Grated zest of 1 lemon
½ tsp mixed spice
150ml milk

To serve

Butter
Golden syrup

Sift the flour and baking powder together into a large mixing bowl with the salt. Add the suet, sugar, drained currants, lemon zest and mixed spice, then add just enough milk to make a soft dough.

Shape the dough into a log cylindrical shape about 12-14cm long and wrap loosely with buttered greaseproof or silicone paper. Wrap this loosely in muslin or a clean tea towel and secure with string at either end. Drop into a pressure cooker or pan and cover with boiling water. Close and secure the lid and cook for 45 minutes in a pressure cooker or 2 hours in a pan of simmering water.

To serve, remove the wrappings and cut the pudding into 3cm slices. Serve with a knob of butter and drizzle with golden syrup.
